How to make Oreo Brookies

These Oreo Brookies combine fudgy chocolate brownie batter, chewy cookie dough, and a layer of Oreo cookies for an indulgent dessert that's packed with chocolatey flavour. Finished with crushed Oreos on top, these layered bars are perfect for slicing into rich, gooey squares.

Prep time: 15 minutes

Cook time: 45 minutes

Total time: 1 hour

You will need

• 9x9-inch square baking pan

• Parchment paper

• Microwave-safe bowl

• Large mixing bowl

Ingredients

• 16 oz store-bought cookie dough

• 14 Oreo cookies, plus extra crushed Oreos for topping

• 2 large eggs

• 1/2 cup cocoa powder

• 1/4 cup vegetable oil

• 1/2 cup brown sugar

• 3/4 cup granulated sugar

• 1/4 tsp salt

• 1/2 tsp baking powder

• 1 tsp vanilla extract

• 1/2 cup unsalted butter

• 1 cup all-purpose flour

• 1/2 cup semi-sweet baking chocolate, chopped

1. Preheat the oven to 350°F. Line a 9x9-inch square baking pan with parchment paper.

2. In a microwave-safe bowl, melt the butter.

Add the melted butter to a large mixing bowl along with the brown sugar and granulated sugar.

Whisk together until combined. Microwave in 15-second intervals until a shiny layer forms on top.

3. Whisk in the eggs, cocoa powder, salt, baking powder, vanilla, and vegetable oil until smooth.

4. Gently fold in the flour until just combined.

Fold in the chopped chocolate.

5. Pour about 3/4 of the brownie batter into the prepared pan.

6. Evenly layer the Oreos on top

Then add a layer of cookie dough.

7. Spread the remaining brownie batter over the top and sprinkle with crushed Oreos.

8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out mostly clean. Some chocolate may remain on the toothpick from the baking chocolate.

9. Let cool completely before slicing into squares. Enjoy!

Tips and tricks!

• For a fudgier texture, remove the brookies from the oven on the earlier side of the baking time, around 40 minutes.

• Let the brookies cool completely before cutting for cleaner slices. Use a sharp knife and wipe it between cuts for the neatest squares.

• Add extra crushed Oreos over the top before baking for even more Oreo flavour.
