After chilling, the tortilla rolls slice neatly into little rounds that are perfect for parties, picnics, lunchboxes, or easy snacks. They can also be prepared ahead and kept chilled until serving time.

You will need

• 4 large flour tortillas

• 8 oz cream cheese, softened 

• 20 oz can crushed pineapple, well drained 

• 9 oz thin sliced ham lunch meat 

• You will also need: butterknife and spoon 

• Plastic wrap and cutting board 

• Serrated bread knife 


1. Spread one quarter of the softened cream cheese evenly over each tortilla. Spread one quarter of the well-drained crushed pineapple over the cream cheese on each tortilla. 


2. Top each tortilla with one quarter of the sliced ham, spreading it evenly over the pineapple layer. 


Tightly roll each tortilla into itself until it meets the other end, keeping the filling tucked inside as you roll. 


3. Wrap each tortilla roll tightly in plastic wrap and chill in the refrigerator for 1 hour, or until ready to serve. 


4. Unwrap the chilled tortilla logs and cut them into 1 inch pieces with a serrated bread knife. Discard the uneven ends, then arrange the pinwheels on a platter to serve. 


Tips and tricks! • Drain the crushed pineapple very well so the filling does not become watery and the tortillas stay firm. 


• Chilling the tortilla rolls before slicing helps them firm up and makes it easier to cut clean, even pinwheels.

• Use a serrated bread knife and a gentle sawing motion when slicing to avoid squashing the pinwheels. Keep them chilled until ready to serve.
