These Snail Pinwheels are a fun twist on classic pinwheel sandwiches, rolled up and decorated to look like cute little snails. They're simple to make and perfect for kids' lunches, parties, playful snacks, or an easy party appetizer that kids will love.

You will need
• 1 extra large flour tortilla
• 2 tbsp mayonnaise, plus extra for attaching the candy eyes
• 7 slices salami
• 4 slices cheddar cheese
• 1/3 cup chopped lettuce
• 2–3 baby dill pickles
• 8 candy eyeballs
1. Cut the pickles into 1/4-inch slices and chop the lettuce.
Spread the mayonnaise evenly over the tortilla.
2. Arrange the salami and cheddar cheese over the tortilla, then sprinkle the chopped lettuce evenly over the top.
3. Starting at one end, tightly roll the tortilla into itself until you reach the other end. Wrap tightly in plastic wrap and refrigerate for 1 hour.
4. Remove the plastic wrap and use a serrated bread knife to cut the roll in half. Cut each half into 1 1/2–2-inch pieces. Discard or snack on the small end pieces that aren't complete rolls.
5. Pat the pickle slices dry. Insert a toothpick into each pickle piece
Then use a toothpick to add a tiny amount of mayonnaise to the back of two candy eyes.
Attach the eyes to the pickle pieces and stick the pickle 'eyes' into the tops of the pinwheels.
Tips and tricks!
Roll the tortilla as tightly as possible so the pinwheels hold their shape when sliced. Chilling the roll for the full hour also makes it easier to cut neatly.
Substitutions: Swap the cheddar for your favorite sliced cheese and use another deli meat in place of salami if desired.
Variations: Try turkey and cheese, ham and cheddar, or cream cheese with vegetables for a different flavor combination.
Storage: Refrigerate the assembled pinwheels in an airtight container and enjoy within 1–2 days for the best texture. Keep chilled until ready to serve.
