How to make Ice Cream Cake Pops

These Melted Ice Cream Cake Pops are so adorable, so delicious and so easy to make! These are a hit with kids and always a crowdpleaser at any get together. 

The base is sweet frosted cookies with sprinkles that get dipped in chocolate and sprinkles with a tiny cone perfect for picking up! 

This recipe makes: 12 Prep time: 20 minutes Chill time: 40 minutes 

You will need

• 10 Lofthouse cookies or similar sugar cookies 
• 4 ounces cream cheese softened 
• ½ tablespoon sprinkles 
• 8 ounces pink candy melts 
• 12 regular ice cream cones 
• Sprinkles for garnish 


Using an electric mixer combine the cookies, ½ tablespoon of sprinkles and cream cheese. 


Blend until well combined. 


Prepare a tray with parchment paper. Roll 1.5 tablespoons of the cookie mixture into a ball and place onto the parchment. Repeat with all the mixture. Place the tray with the cake balls into the freezer to chill for at least 30 minutes. 

Meanwhile, using a serrated knife, carefully cut off the ends of the sugar cones, making tiny sugar cones for each cake ball!  

In a microwave safe dish in 30 second intervals melt the pink candy melts. Dip the end of each cone into the melted chocolate and place onto a cake ball. 


The chocolate should set very quickly and once it has, dip your cake ball into the chocolate and place onto the parchment paper. 


No need to let the excess drip off because you want a little puddle to look like the icecream is melting. Immediately sprinkle with extra sprinkles. Let set or place in the fridge for 5 minutes to speed up the setting process. Serve! 


Tips and Tricks! Store leftovers in an airtight container in refrigerator for up to 3 days. 


You can use any soft frosted cookie you like. You can use any color candy melts you like. 


Some stores sell the ends of cones filled with chocolate and those would work great here too!

6. Set up a chalkboard style party message wall for guests 

So all guests can write, draw and scribble their own messages on it! You could set up a giant chalkboard canvas that guests can decorate, with photos, drawings and messages!
