You will need
• 1 cup graham cracker crumbs
• 1 (16.5 oz) roll sugar cookie dough
• 8 oz cream cheese - softened
• ½ cup unsalted butter - softened
• 2 cups confectioners’ sugar
• 1 tsp vanilla extract
• Blue food coloring
• 1 to 3 tbsp milk
• Umbrella appetizer picks
• Gummy sea creatures
• Gummy bears
1. Preheat the oven to the temperature indicated on the sugar cookie dough package. Bake the cookies according to the package directions.
Allow the cookies to cool completely while you prepare the frosting. The frosting will sit much better once the cookies are fully cooled.
2. In a large mixing bowl, combine the softened butter and cream cheese.
Add half of the confectioners’ sugar and mix until smooth.
Add the remaining confectioners’ sugar and vanilla extract, then continue mixing.
Gradually add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
3. Add a few drops of blue food coloring and mix well.
Once the cookies have completely cooled, spread the frosting evenly over each cookie.
4. Sprinkle graham cracker crumbs onto some of the cookies to create sandy beach sections, leaving some blue frosting showing as the ocean.
Add umbrella picks to the sand and decorate the ocean with gummy bears and sea creatures. Serve and enjoy!
Tips and tricks! Store the decorated cookies in an airtight container at room temperature for up to 3 days, or refrigerate them for up to 1 week.
Adjust the amount of blue food coloring to get your favourite ocean shade. A little goes a long way, so start small and add more if needed.
You can also use other colours to create different beach or ocean themes. Add the graham cracker crumbs in different widths so each cookie looks a little different.
