How to Make Apple Pie Cookies


These Apple Pie Cookies are the perfect twist on a classic dessert! Made with store-bought pie crusts, sweet apple pie filling, and a beautiful lattice top, they look just like mini apple pies but in a fun, handheld cookie form. 

Each cookie has a buttery, flaky crust with a warm spiced apple center, topped with a golden egg wash and sparkling sugar for a bakery-style finish. They’re easy to make, impressive to serve, and guaranteed to bring cozy fall flavors to every bite. Perfect for holiday gatherings, bake sales, or just a sweet treat with your morning coffee. 



This recipe serves: 16 

Prep time: 15 minutes 

Cook time: 25 minutes 

Total time: 40 minutes 


You will need

• 4 store bought refrigerated pie crusts 

• 21 oz can of apple pie filling 

• 1 egg 

• 1 tbsp of white sanding sugar 


Preheat the oven to 350° and line a large baking sheet with parchment paper. Roll the pie crust out on a flat surface and use a cookie cutter to cut out circles out of 2 of the pie crust rolls. 


Add the cut out cookies to the baking sheet. 


Add 1-2 tablespoons of the apple pie filling to the middle of each cookie. Make sure to leave a tiny bit of pie crust around the apple pie filling. Then, in a small bowl, add the egg and stir - then brush the beaten egg around the edge of the cut out pie crust, making sure there’s no apple pie filling on the edges.


Unroll the last two pie crusts and use a pizza cutter or knife to make small strips. Take the pie crust strips and make a lattice pattern on the cookie, pressing the edges down on the egg washed sides. 


Do this step carefully so the strips don’t break. 


Once you have all the strips placed correctly use the same cookie cutter and place over the cookies so the edges come clean from the lattice. Brush the beaten egg over top of each cookie once again and then sprinkle with the sanding sugar. 


Bake in the oven for 20-25 minutes or until the tops are golden brown. Let cool completely and then serve and enjoy! 


Tips and tricks! 

• Store in an airtight container in the fridge for 2-3 days. 

• No parchment paper? Spray the baking sheet with nonstick cooking spray. 


 You can pick up the rest of the pie crust (after cutting the cookies out of it) and roll it into a ball and flatten it out with a rolling pin to cut extra cookies out! 


• No cookie cutter? Use a cup that’s around about the same size! 


 You can use scissors to briefly chop up the apples in the can to smaller pieces.
