Here is how to make easy Snowman meringue cookies - they almost double as cute party decor as well as winter treats! They are easy to make with a handful of kitchen ingredients, yet look much fancier.
These would be perfect for serving at a winter themed birthday party or baby shower and would be adorable for a wintry festive themed afternoon tea party.
You will need
• 60g egg whites ( 2 medium eggs approx.)
• 90g granulated sugar ( ¼ cup + 3 tbsp )
• ½ tsp vanilla extract
• 2 tbsp melted white chocolate
• 2 tbsp melted dark chocolate (for the eyes, mouth and buttons)
• Oil based green food coloring (for the melted white chocolate)
• Oil based orange food coloring (for the melted white chocolate)
• Piping bags for piping the melted chocolate
To begin, preheat the oven to 210℉ and line a baking sheet with parchment paper.
Wipe down the bowl and whisk attachment of your stand mixer with a little bit of white vinegar on a paper towel.
Place the eggs and sugar in the medium heat safe bowl and use a whisk to combine. Place the bowl over a
pot of simmering water, be careful that the water does not touch the bowl.
Gently and continuously whisk the egg whites and sugar until they reach 120℉.
When you rub the mixture between your fingers, the sugar will be completely dissolved. Remove
from the heat.
Using a hand mixer (or a stand mixer) start whisking until you reach stiff peaks. The meringue should look glossy in appearance.
Scoop the meringue into a large piping bag fitted with a round tip.
Pipe a golf ball sized ball onto the parchment, then pipe another grape sized ball on top, repeat for
the rest of the meringues.
Bake for 60- 90 minutes depending on the size of your meringue cookies. You know they are
done when you can peel a meringue off the pan.
Once they are done baking, turn the oven off and let the cookies stay inside until completely cool
for like 2 hours.
Colour 1 tbsp of melted white chocolate with green food colouring and the other 1 tbsp of chocolate
with orange food colouring. Use orange one for the nose and the green one for the scarf.
With melted dark chocolate chips, pipe on eyes, mouth, buttons and arms onto the snowmen.
Tips and tricks! You can melt colourful chocolate melts or melting wafers right in a piping bag, for decorating. Bring a pan of water to 170-175 degrees (not boiling), remove from the heat and put your bag in. Make sure the top is sealed with a clip (we kept the top out of the water). Let sit for 5-7 minutes. You can massage the bag to spur on any unmelted disks. Clip off the bottom and you are good to go.
