How to make Cherry Chip Poke Cake

This Cherry Chip Poke cake is full of chopped cherries and mini chocolate chips. This delicious cake is then poked with holes and filled with a cherry vanilla pudding mix, topped with whipped cream and plenty of cherries and more chocolate chips. This is always a hit! 


This is perfect to serve for a cherry themed birthday or baby shower, summer party, or for a carnival, fairground or circus themed party - we like to call it our 'red nose circus cake'. It would also make the perfect BBQ party dessert with its merry fusion of creamy topping, fruit and cake, an irresistable combination! 

This recipe serves: 12 Prep time: 15 minutes Bake time: 35 minutes
 


You will need 

• 15.25 box white cake mix 
• 3/4 cup water 
• 1/2 cup sour cream 
• 1/3 cup vegetable oil 
• 1 teaspoon almond extract 
• 4 egg whites 
• 1 cup miniature semisweet chocolate chips, plus more for topping 
• 1 cup chopped maraschino cherries, drained and rinsed 
 3.4 ounce box instant vanilla pudding 
 2 cups cold milk 
• 2 tablespoons maraschino cherry juice 
• 8 ounce whipped topping 
• A few extra cherries for garnish 

 
Preheat oven to 350 degrees. Grease a 9x13 baking dish. 


In a large bowl, using an electric mixer combine the cake mix, water, sour cream, vegetable oil, almond extract and egg whites until just combined. Next stir in the chopped cherries and chocolate chips. 


Pour the batter into the prepared pan. Bake 35 minutes or until a toothpick inserted in the middle comes out clean. 


Remove from oven and cool completely. Using the end of a wooden spoon or smoothie straw poke holes all over the cake. 


Whisk together the vanilla pudding mix, cold milk and maraschino cherry juice. Pour the pudding mix into the holes and all over the cake. 


Top the cake with the whipped topping. Garnish with chocolate chips. 


Add cherries, slice and serve! 


Tips and Tricks! Store leftovers in an airtight container in refrigerator for up to 3 days. 


You can use french vanilla cake mix or cherry cake mix if you can find it. You can use regular sized chocolate chips if you like.

 3. Cherry pie bites 

These Air Fryer Cherry Pie Bites are a quick and delicious way to enjoy the classic flavors of cherry pie in a bite-sized treat. Made with flaky biscuits and sweet cherry filling, they cook up golden and crispy in minutes. 

You will need only a handful of ingredients - Grands Biscuit dough or similar (to us in UK these are like flaky scones - we may need to make the dough from scratch first) cherry pie filling, powdered sugar and milk. Our recipe serves 16, takes around 15 mins to make and about 10 minutes to bake. 

You will need
• 8 Grands biscuits flaky layers, separated in half 
• 1 - 1 1/2 cups cherry pie filling 
• ¼ cup powdered sugar 
• 1-2 tsp milk 
• Measuring cups and spoons
• Small bowl and spoon
• Air fryer  

Start by separating the biscuits in half, then roll each half out to make it flat. 


Add a small spoonful of filling (about 3 cherries with a little of the glaze) into the center of each.


Then pull the edges up and pinch together to somewhat form a ball shape. 


Grease the air fryer basket and place the cherry pie bites spaced apart in the basket, seam side up. I was able to make 8 at a time. 


Air fry at 350 for 5 minutes, then flip the cherry pie bites over and air fry for another 5 minutes. Then remove the cherry pie bites from the air fryer and allow to cool slightly. 


Mix the powdered sugar and milk to make the glaze. 


It's ready when it has a smooth consistency.


Then use a spoon to drizzle over the cherry pie bites. 


You could alternatively use some pink cherry glace icing to top or cover them, like mini cream puffs or profiteroles. These make perfect afternoon tea party bites!
