How to make Two Ingredient Lemon Sunshine Bars

Here is how to make these two ingredient bars of sunshine, bursting full of refreshing lemon flavor and so easy to make, by combining lemon pie filling with angel food cake mix! The result is a decadent and luscious sponge bursting with sunny flavour - the ultimate sunshine bars, perfect for a summer get together, party or special occasion. 

These can be topped with powdered sugar, whipped cream, fruit or anything you like - you could even set up a stall of toppings where guests can top theirs with fruit, cream, zest, compote or lemon dip! No one will believe these are made so easily with only two ingredients. This recipe serves 12-16, with a prep time of 5 minutes and bake time of 30 mins. 

You will need 
• 1 (16 ounce) box angel food cake mix 
• 21-22 ounce lemon pie filling
• Powdered sugar, whipped cream, mint, lemon for topping (optional)

To begin, preheat your oven to 350 degrees. Spray a 9x13 baking dish with non-stick spray and or line with parchment paper. 

In a large bowl or dish, using a spoon, gently mix together the angel food cake mix and lemon pie filling. 

Mix until combined.

Once combined spread the batter out into the pan. Bake at 350 degrees for 30 minutes. 

Remove from oven and set aside to cool. Sprinkle with powdered sugar if you like. Slice, top with desired ingredients for decoration and serve! 

Tips and Tricks! Store leftovers in an airtight container for 3 days. You can add lemon zest if you like. 

Make sure your angel food cake mix only calls for water, that is the kind you need to use. But do not add any water.
