How to make Lemon Meringue Pie Dip

This Lemon Meringue Pie Dip is the perfect summer treat! It is super decadent, yet super quick and easy to make - the perfect Mamma mia inspired dip to bring a little sunshine to your party table, along with all the sweet, tangy and dreamy lemon flavour of traditional lemon meringue pie. It will become the main attraction of your summer garden party, birthday party or baby shower! 

 
This recipe serves 6, comes together in 20 mins (plus chill time of 2 hours) with a few simple ingredients and tastes amazing! This refreshing treat will be the hit of any get together. The tangy, sweet lemon dip is topped with luscious meringue and served with pie crust chips for dipping.

You will need
• 1 cup fresh lemon juice 
• 2 (14 ounce) cans of sweetened condensed milk 
• Refrigerated pie crust 
• 4 egg whites 
• ¾ cup sugar 


In a mixing bowl whisk together the lemon juice and sweetened condensed milk until well combined. 


Pour into a pie dish and set in the refrigerator to chill about 2 hours. 


In the meantime, slice your pie crust into triangles, about chip size and place on a baking sheet. Bake them for 10-12 minutes until golden and crisp. 


Next prepare your meringue. In the bowl of your stand mixer add the sugar and egg whites.


Whip with the whisk attachment until stiff glossy peaks form. 


Once you have your stiff peaks spoon the meringue on top of the dip and spread out into peaks with a spoon. Use a kitchen torch to broil the meringue, then top with a lemon slice for decoration. Serve! 


Tips and Tricks! Store leftovers in the refrigerator in an airtight container for 3 days.
