1. Easy raspberry parfaits

These Raspberry Cheesecake Parfaits are a dreamy dessert featuring layers of creamy cheesecake filling, and crunchy graham cracker crumbs. Served in individual cups, they’re perfect for parties, gatherings, or a sophisticated sweet treat.

This recipe serves approx 4-8 depending on what size glasses or cups you use - with a prep time of 15 minutes and our chill time was 1 hour - or until ready to serve!

You will need

• Measuring cups and spoons
• Large bowl
• Electric mixer
• Spatula or spoon
• Small glasses or parfait cups
• Piping bag (optional)
• 8 oz cream cheese, softened
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 pint raspberries
• 8 oz whipped topping
• 1 cup crushed graham crackers

First beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.

Add 1 cup of raspberries

Then beat until well blended.

Fold in 1 cup of whipped topping.

Then mix until you have a solid colour.

Crush your graham crackers if you haven’t already done so, then add about 1 tablespoon of graham cracker crumbs to the base of your glass.

Then fill halfway with the raspberry cheesecake mixture.

Then repeat this process, by adding atop another layer of graham cracker crumbs.

Then a layer of raspberry cheesecake.

Chill the parfaits for 1 hour or until ready to serve. Once ready to serve, top with a dollop of whipping topping and a raspberry.

These look so striking all arranged together - they will have guests heading to the dessert table on repeat!

2. Cherry pie bites

These Air Fryer Cherry Pie Bites are a quick and delicious way to enjoy the classic flavors of cherry pie in a bite-sized treat. Made with flaky biscuits and sweet cherry filling, they cook up golden and crispy in minutes.

You will need only a handful of ingredients - Grands Biscuit dough or similar (to us in UK these are like flaky scones - we may need to make the dough from scratch first - I'll try to find a recipe for this) cherry pie filling, powdered sugar and milk. Our recipe serves 16, takes around 15 mins to make and about 10 minutes to bake.

You will need

• 8 Grands biscuits flaky layers, separated in half
• 1 - 1 1/2 cups cherry pie filling
• ¼ cup powdered sugar
• 1-2 tsp milk
• Measuring cups and spoons
• Small bowl and spoon
• Air fryer

Start by separating the biscuits in half, then roll each half out to make it flat.

Add a small spoonful of filling (about 3 cherries with a little of the glaze) into the center of each.

Then pull the edges up and pinch together to somewhat form a ball shape.

Grease the air fryer basket and place the cherry pie bites spaced apart in the basket, seam side up. I was able to make 8 at a time.

Air fry at 350 for 5 minutes, then flip the cherry pie bites over and air fry for another 5 minutes. Then remove the cherry pie bites from the air fryer and allow to cool slightly.

Mix the powdered sugar and milk to make the glaze.

It's ready when it has a smooth consistency.

Then use a spoon to drizzle over the cherry pie bites.

You could alternatively use some pink cherry glace icing to top or cover them, like mini cream puffs or profiteroles. These make perfect afternoon tea party bites!

3. Strawberry Pie Party Bites 👈🏻

These Strawberry Pie Party Bites are a delightful mini dessert, featuring buttery crusts filled with sweet, juicy strawberries and whipped cream. Easy to make and irresistibly delicious, these bite sized treats will be the star of your dessert table! They are one of the easiest party desserts to make and would be just right for a summer picnic or party spread! This recipe makes 12 and you can whip them up in half an hour.

4. Mini Strawberry Pies 👈🏻

These look complex but are so quick and easy to make - plus look stunning on the party table! They are perfect for a picnic spread or strawberry themed birthday party or baby shower and take only 4 ingredients. They are great to make at home with your little helpers and they are so cute! You could even swap the filling out for cherry, blueberry... there are so many options! Strawberry pie is one of the best desserts, but making it into a mini version is even better!

5. Ham rollups

These Low Carb Ham Rolls are a deliciously simple snack or appetizer, featuring savory ham wrapped around a creamy filling of cream cheese, Swiss cheese, and zesty ranch seasoning. A hint of lemon juice adds a fresh twist to these bite-sized treats. Perfect for K.E.T.O. and low-carb diets, they’re quick to prepare and packed with flavour! Servings: 36 Prep time: 15 minutes Down time: chill 30 minutes

You will need

• Toothpicks
• 12 oz cream cheese, softened
• 1 - 1oz packet dry ranch seasoning mix
• 2 tsp lemon juice
• 6 thick slices of ham, rectangular
• 12 slices swiss cheese

To begin, mix cream cheese, ranch seasoning, and lemon juice in a small bowl.

Lay out the slices of ham, then arrange two slices of swiss cheese onto each slice of ham.

Spread cream cheese mixture over cheese.

Start from one end (longside), and roll into itself. Chill for 30 minutes.

Slice each roll into 6 individual sections.

An optional step is to insert a toothpick into the center of each to serve, to make them easier to pick up!

Serve on a platter for guests to enjoy!

6. Chicken salad pinwheels 👈🏻

These Chicken Avocado Salad Pinwheels are a fresh and flavourful snack or appetizer, featuring tender chicken, creamy avocado, and flavorful ingredients wrapped in soft tortillas.
