No Bake Avalanche Cookies serves: 16
Prep time: 15 minutes
Additional time: 30 minutes (chill time)
Total time: 45 minutes
You will need
• 2 cups white chocolate chips
• ½ cup creamy peanut butter
• 2 ½ cups crispy rice cereal
• 1 ½ cups mini marshmallows
• ¼ cup holiday sprinkles
1. Line a large baking sheet with parchment paper and set aside. Add the white chocolate chips to a large microwave-safe bowl. Microwave in 20-second intervals, stirring well between each interval, until completely melted and smooth.
2. Add the peanut butter to the melted white chocolate and stir until smooth and completely combined.
Let the mixture cool for about 3–5 minutes so it isn’t too hot when the remaining ingredients are added.
3. Add the crispy rice cereal and mini marshmallows.
Gently fold everything together until evenly coated in the white chocolate mixture.
Use a cookie scoop or large spoon to drop mounds of the mixture onto the prepared baking sheet. Immediately sprinkle the sprinkles on the tops.
Refrigerate for about 30 minutes, or until the cookies are completely set.
Once firm, remove from the refrigerator and serve.
Tips and tricks!
• Keep on the counter for 2–3 days in an airtight container.
• Allow the melted white chocolate and peanut butter mixture to cool slightly before adding the marshmallows so they don’t melt.
• Don’t wait too long to scoop the cookies because the white chocolate will begin to set as it cools.
• For smaller bite-sized cookies, use a small cookie scoop and make about 24–30 cookies.
