How to make Easy Turkey Stuffing Hand Pies

These Thanksgiving Leftover Hand Pies are the ultimate way to use up your holiday leftovers! Shaped like little moons, flaky pie crust is stuffed with turkey, stuffing, mashed potatoes, gravy, and a little cranberry sauce for the perfect bite of Thanksgiving in handheld form.

They're easy to make, freezer-friendly, and perfect for the day after the big feast or for holiday parties.

Thanksgiving Leftover Hand Pies serves: 12

Prep time: 15 minutes

Cook time: 30 minutes

Total time: 45 minutes

You will need

• 1 (15 oz) package refrigerated pie crusts, 2 count

• Flour, for dusting

• 1 cup leftover mashed potatoes

• 1 cup leftover stuffing

• 1 cup diced or shredded leftover turkey

• 1/2 cup leftover cranberry sauce, plus more for dipping

• 1 egg

• 1 tsp milk

• Leftover gravy, for dipping

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. Roll the pie crusts out on a lightly floured surface to about 1/8-inch thick. Cut out 12 rounds using a 4 1/2-inch biscuit cutter or a similar-sized cup, then place the rounds on the prepared baking sheet.

3. Divide the mashed potatoes, stuffing, turkey, and cranberry sauce evenly between the dough rounds, placing the filling on only one half of each circle.

4. Fold each dough round over the filling to create a half-moon shape. Crimp the edges tightly with a fork to seal.

5. Whisk together the egg and milk, then brush the mixture over the top of each pie. Cut 3 small slits in the top of each pie.

6. Bake for 30 minutes, or until the crusts are golden brown.

Let the hand pies rest for 5–10 minutes before serving with leftover gravy and cranberry sauce for dipping.

Tips and tricks!

• Don't overfill the dough. A spoonful of each filling is enough to keep the hand pies from bursting.

• Seal the edges tightly with a fork and chill the dough slightly if it becomes warm or sticky while you're working.

Substitutions

• Use crescent dough, puff pastry, or biscuit dough instead of pie crust.

• Skip the cranberry sauce or replace it with a little gravy.

• Leftover ham, chicken, or roast beef can be used instead of turkey.

• Use sweet potatoes, roasted potatoes, or a little green bean casserole instead of mashed potatoes.

Variations

• Add shredded cheddar or Swiss cheese for a cheesy version, scrambled egg or leftover breakfast sausage for a breakfast-style pie, or use a smaller cutter to make mini appetizer-sized pies.

• For a sweet and savory twist, mix a little cranberry sauce into the stuffing.

Storage

• Freeze unbaked hand pies for later. Bake from frozen when needed, adding extra baking time as necessary.

• Store baked leftovers covered in the refrigerator.
