How to make Funfetti Stuffed Cookies

These are the best birthday cookies ever - or make the perfect joyful treat for making with little ones! These special funfetti cookies harbour a special surprise - a hidden golden Oreo concealed within each one. Loaded with sprinkles and golden Oreo pieces, baking these becomes a whole celebration in itself!

Funfetti Stuffed Cookies Serves: 12 cookies

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

You will need:

• 1 cup unsalted butter

• ½ cup light brown sugar

• ½ cup granulated sugar

• 1 tsp vanilla extract

• 1 large egg

• 2 cups all-purpose flour

• ¼ tsp salt

• ½ tsp baking soda

• ½ cup white chocolate chips

• ¼ cup rainbow sprinkles

• 12 golden Oreos (plus ⅓ cup crushed)

To begin, line a baking sheet with parchment paper and preheat the oven to 350°F.

Melt the butter and let it cool for 5–10 minutes, until it feels just slightly warm. Then, in a large mixing bowl, using a hand mixer or stand mixer, beat the melted butter with the brown sugar and granulated sugar until smooth.

Beat in the vanilla extract and egg until fully combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Add half of the dry ingredients to the wet ingredients and mix with a rubber spatula or spoon until just combined.

Add the remaining flour mixture and continue stirring until a soft cookie dough forms. Then fold in the white chocolate chips, rainbow sprinkles, and crushed golden Oreos.

Scoop about 1½ tablespoons of dough and flatten it in your hand. Place a golden Oreo in the center

Then use about 1 ½ more tablespoon of dough to fully cover the cookie, sealing the edges and rolling it into a smooth ball so the Oreo is completely enclosed.

Place the cookie dough balls on the prepared baking sheet, spacing them 2–3 inches apart. If you like, sprinkle a few extra rainbow sprinkles and some crushed Oreos on top.

Bake for 10–12 minutes, until the edges are golden and the centers are still slightly soft.

Remove from the oven and let the cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack to finish cooling. Serve and enjoy!

Tips and tricks! The cookies will continue to set as they cool, so don’t overbake them.

Extra sprinkles pressed onto the tops before baking make them even more fun and colorful!
