1. Microwave pumpkin spice caramels
These easy Pumpkin Spice Microwave Caramels are rich, chewy, and bursting with warm fall flavor, and you can make them in under 10 minutes! No candy thermometer, no stovetop fuss, just a microwave and a few pantry ingredients.
Each bite is buttery, soft, and perfectly spiced with cinnamon, nutmeg, and pumpkin pie goodness. Wrap them in wax paper for a fun homemade gift, or keep them all to yourself!
This recipe makes: approx 20-24 caramels
Prep time: 5 minutes
Cook time: 7 minutes
Storage & Make Ahead
Store caramels in an airtight container at room temperature for up to 2 weeks. For longer storage, keep them in the fridge for up to 1 month,just bring to room temp before eating. These can be made a few days ahead for parties, holidays, or edible gifts.
You will need
• ½ cup unsalted butter
• ½ cup light corn syrup
• ½ cup granulated sugar
• ½ cup brown sugar
• ½ cup sweetened condensed milk
• 1 teaspoon pumpkin pie spice
• 1 teaspoon vanilla
• A large microwave safe bowl (or a large microwave safe jug for pouring is even better!)
• An 8x8 baking dish or similar
To begin, butter an 8x8 baking dish.
In a large microwave safe bowl that can withstand high temperatures, melt the butter. Then whisk in the granulated sugar.
To the melted butter mixture then whisk in the corn syrup, brown sugar and sweetened condensed milk. Place into the microwave for 7 minutes. Then, carefully remove the caramel from the microwave and whisk in the vanilla and pumpkin pie spice.
Very carefully, immediately pour into the prepared pan.
Place in the fridge for an hour to chill.
Top with a sprinkle of cinnamon.
Slice and serve!
Substitutions
Pumpkin Pie Spice – No blend? Use ½ tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger or cloves.
Corn Syrup – Can’t use corn syrup? Try golden syrup or brown rice syrup, though texture may vary slightly.
Sweetened Condensed Milk – This is key for the chewy texture, no direct sub, but you can use a dairy-free version if needed.
Butter – Salted butter works too, just reduce or omit extra salt if you add any.
Tips & Tricks
• Use a big bowl, the caramel mixture bubbles up a lot while cooking, so make sure your bowl has plenty of room!
• Microwave power matters, every microwave runs a little differently. If your caramels are too soft, try adding 30 seconds next time. Too hard? Cut the time by 30 seconds.
• Grease your knife before slicing for cleaner cuts.
